SAUCE FOR COLD MEAT AND FISH
4 tablespoons salad oil
Mustard
4 tablespoons cream
Salt
3 tablespoons vinegar
Pepper
Mix the salad oil, cream, vinegar, a little mustard, salt and pepper. Beat together quickly, with an egg-beater. The sauce gets white quickly and looks like whipped cream. Soon it becomes as thick as the best-made mayonnaise. Eggs are not required, the sauce will not curdle, and can be made quickly.
Chili Dip
1 15-ounce Hormel Turkey With Beans, 99% Fat-Free Chili
1 8 oz. package fat-free cream cheese
1 cup reduced fat shredded sharp cheddar cheese
Allow the cream cheese to soften completely to room temperature. Spread the cream cheese on the bottom of a shallow casserole type dish. Next, evenly spread the chili over the cream cheese. Lastly, sprinkle the shredded cheese over the chili. Bake at 350F for 20 to 25 minutes or until heated through.
Serve hot with baked tortilla chips.

Layered Pizza Dip
8 ounce container fat-free cream cheese
1/2 cup chunky pizza sauce
1/4 cup chopped green pepper
1/3 cup thinly sliced mushrooms
1/4 cup minced onions
1 cup reduced fat shredded cheddar cheese
Heat oven to 350F. Using a 9" pie pan, layer all ingredients in order listed, starting by spreading cream cheese evenly over bottom of the pie pan. Bake 15 minutes or until dip is hot and cheese is melted. Serve warm with crackers or chips.

Vegetable Dip
1/2 cup reduced-calorie or light mayonnaise
1 1/2 cups plain non-fat or low-fat yogurt
4 scallions, chopped
1/4 cup fresh lime juice
2 cloves garlic, minced
One 10-ounce package frozen chopped spinach, thawed, drained, and squeezed dry Raw vegetables for serving In a bowl, combine all of the ingredients except the raw vegetables. Cover and refrigerate for 30 minutes to allow the flavors to blend. Serve with cut raw vegetables.

Chipotle Sauce
2 Chipotle Chiles;
2 Bacon; Slices, Finely Cut Up
1/4 Cup Onion; Finely Chopped, 1 small
3 Cup Tomatoes; Finely Chopped
1 Cup Beef Broth
1/4 Cup Carrot; Finely Chopped
1/4 Cup Celery; Finely Chopped
1/4 Cup Fresh Cilantro; Snipped
1/2 Teaspoon Salt
1/4 Teaspoon Pepper
You can make this sauce as hot as you want by adding up to a total of 4 dried Chipotle chiles. Cover chilies with warm water. Let stand until softened, about 1 hour. Drain and finely chop. Cook and stir bacon and onion in a 2-quart saucepan until bacon is crisp; stir in chilies and remaining ingredients. Makes about 4 cups sauce.

Bread Sauce (The Belling Recipe Collection)
(A traditional English sauce served at Christmas dinner)
250g milk
50g breadcrumbs
1 onion stuck with whole cloves
1 blade mace
2-3 peppercorns
25g butter
Salt and pepper
1. Put onion with cloves, mace and peppercorns into milk.
2. Bring slowly to boil. Cover and leave to infuse over gentle heat for about ½ hour.
3. Strain milk over breadcrumbs. Butter and season to taste.
5. Simmer gently for 20-30 minutes.
Serve with roast chicken or turkey.
