Definition

LIVER AND BACON SANDWICHES
l/2 cup chopped bacon
l/2 cup mashed liver
l/4 cup cream
Salt and pepper
Mix chopped bacon and mashed liver, season with pepper and salt and mix with cream. Spread between slices of buttered bread. Decorate the plate with a border of lemon slices and hard-cooked eggs cut into halves lengthwise, with a sprig of cress or parsley on each half egg.

HAM OR BACON AND CHEESE SANDWICHES
Butter slices of toasted bread. Cover with a thin slice of boiled ham or bacon, spread with mustard, and cover with a layer of thinly sliced or grated cheese. Place the slices in the oven until the cheese is melted. Garnish with minced parsley and serve at once.

Maryland Soup (Recipe of Love)

2 rashers streaky bacon
2 potatoes
2 oz. butter
Large tin sweetcorn
2 bananas
1 onion
2 sticks celery
1 pt. stock
Seasoning
8 rashers streaky bacon
Skewers

Chop the 2 rashers bacon with the onion, potatoes and celery and cook them in the butter until soft but not brown. Add the stock, and cook until the potatoes are tender, then add the sweetcorn and season to taste. Halve the bananas and wrap each half in a rasher of bacon. Arrange on 4 skewers and grill on both sides until bacon is crisp and brown. Pour the soup into bowls and place a skewer across each.

Bacon Broth (Recipe of Love)

1 lb. red kidney beans (haricot beans would do)
2 cloves garlic, chopped
Piece of boiling bacon
4 pairs small garlic sausages
4 oz. butter or bacon fat
2 medium sized onions
6 pt. stock
2 large tomatoes, peeled and chopped

Soak the beans overnight. Melt the bacon fat or butter in a large saucepan, then add the chopped onions and garlic and fly for a few minutes. Add the beans with the stock, bacon and tomatoes, bring to the boil and simmer gently for about 2-3 hours until the bacon and beans are tender. Add the sausages and cook for a further half hour. The bacon should be taken out and sliced and can be eaten either in the soup or as a separate course.
