500g lean beef, cut into strips 4tsp fajita seasoning 1/2 cucumber, sliced 1 garlic clove, crushed 100g half-fat creme fraiche small bunch fresh coriander, chopped 300g tomatoes, chopped 2 ripe avocados, sliced 1tbsp olive oil 1 red onion, finely sliced 1 red pepper, sliced, 4 tortilla wraps
1. Sprinkle the beef with the fajita seasoning and leave to marinate. Meanwhile, add the cucumber and half the garlic to the creme fraiche, stir well and set aside. Add the coriander and remaining garlic to the tomatoes, season with salt and pepper and pour over the avocado.
2. Heat half the olive oil in a wok, add the beef and fry on a high heat for 2 minutes. Remove from the pan and set aside. Add the onion and pepper and fry for 3 to 4 minutes. Return the beef to the pan and toss all the ingredients together. Divide the beef, avocado, tomato and creme fraiche between four tortillas and serve immediately.
